if enlarge the plane so that the engine fitsit should work fine as long as the engine is perfectly strait, as I suppose that a little slant could cause a big slant with all that pressure...

am I the only one imagining a plane with a rocket engine in each wing?

If you are using two rapiers it may just be possible to light both at once with the help of an assistant and TWO igniters. Model rocket motors? Forget about it, those things burn out in a second and give way too much thrust ;)
